Daniele Balsamic Vinegar 1-Star with 4 to 5 years of aging
The single star stands for four to five years of aging in the open wooden casks of our battery in Schaffhausen. There, the aceto gains tranquility, length, and that clean depth that you notice from the very first drop. We work with Pinot Noir grapes instead of Trebbiano. This gives our Swiss product a distinctive approach: darker in fruit, straightforward in acidity, and clear in character.
Four finishes additionally shape the character. They do not build the profile broadly, but rather precisely. First comes the fruit. Then the acidity opens up. Finally, a subtle oak note lingers. Not loud at all costs, but cleanly tuned for daily use.
Sensory & Pleasure: dark berries, oak, and a fresh finish
On the palate, this aceto presents itself as pleasantly sweet and tart at the same time. The flavor profile is reminiscent of dark berries. Even in a simple vinaigrette with good olive oil, a little salt, and some pepper, it immediately feels clear and reliable.
It also pairs very well with burrata, cherry tomatoes, and basil, with bresaola and young Parmesan, or with lukewarm lentils and red onions. Marco's personal tip: a few drops over lentil salad with olive oil and a pinch of salt. Often, that is all it takes. The 500 ml bottle is the classic family size. The 3000 ml bag-in-box is suitable for bulk consumers, for refilling, and for kitchens where good vinegar is used continuously. The dosage remains the same for all sizes because this vinegar is intensely formulated.

Storage & Shelf Life
Close tightly after opening and store in a cool, dry place protected from light. This keeps the fruit, acidity, and barrel notes in balance. If you are using the bag-in-box, it is best to decant into a smaller bottle in portions. Minimal contact with air does it good.
