For 32 years, the Serni family in Bolgheri, near Castagneto Carducci, in the Maremma has been the „purveyor to the court“ for the popular house olive oil, which is considered an insider tip and is only available from Daniele. It is (naturally!) cold-pressed and is suitable for both hot and cold dishes.
The olive trees grow in the immediate vicinity of the oil mill and are not sprayed. As has been the custom since time immemorial - which is why the company does not seek organic certification, which involves a lot of effort and expense: This does not change the exquisite taste anyway. This is because the high quality of the starting product, the olives, is the only decisive factor. And then the gentle and dry pressing.
Old traditions, Italian sun-ripened olives and a high-tech Swiss-made press.
After washing, the olives are carefully dried and sent for further processing without process water. The subsequent cold extraction takes place under exclusion of air (incidentally on a modern high-tech press made in Switzerland), which guarantees the best taste. This shows: It is possible to uphold old traditions and at the same time be open to modernity - for the benefit of the end product. And to the delight of its consumers.
Il Boschetto olive oil
Take ... first-class olive oil from Tuscany and enrich it with selected spices and flavorings such as lemon, peperoncino and garlic.
The result: The infusions from Il Boschetto from the Maremma, which breathe an „Italian“ soul into many dishes, even if the raw materials are not available or at hand.
Extracts from many kilograms of first-class ingredients, careful, fresh preparation and a balanced dosage ensure that the oils are neither over-seasoned nor oversalted: you can just feel that the flavors are there - but nothing is overpowering.
