
Pasta from Pasta Rustichella
Pasta Rustichella pasta is handmade in Abruzzo. Only the best selected durum wheat semolina („primo grano“) with a high gluten content is used and the pasta dough - which may also contain eggs depending on the variety - is made with pure mountain water.
This gives the pasta a unique bite and lots of flavor: a world of difference to industrially produced pasta! The slow, gentle pressing of the dough through bronze dies („trafilatura al bronzo“) also ensures a slightly rough surface that allows any type of sauce to adhere well. Finally, the drying process also takes place slowly and at low temperatures.
The result: pasta in various shapes that makes a noticeable difference. Buon appetito!
