Spring is the time. Green asparagus is served here and combined with a risotto to create a dish. It's amazing how intense the dried asparagus tastes. They are very elegant and have a nice, clearly defined bite after 19 to 21 minutes. Season to taste with Sbrinz. Or with Parmesan and olive oil.
