Condimento Bianco by Daniele Gaumenschmaus is not just another interchangeable white balsamic vinegar off the shelf, but a homemade proprietary product from Schaffhausen. We have been producing this light condimento ourselves since 1999, making us pioneers on the Swiss market: we were the first to develop a white balsamic specialty based on Riesling-Sylvaner grape must, without relying on the Italian original. The result is a fruity, balanced condimento with gentle acidity, subtle tertiary notes, and a light amber color.

Craftsmanship & Quality: Schaffhausen manufacturing with its own distinct profile

The basis for our Condimento Bianco is Riesling-Silvaner grape must. This matures for around a year in oak barrels at our production facility in Schaffhausen. This gives the product a very distinct profile that clearly sets it apart from anonymous mass-produced goods. The oak barrel maturation brings structure, mild depth, and those fine tertiary notes that separate a homemade condimento from an industrial product. At the same time, it remains bright and clear enough to be versatile in modern cooking.
The deliberate choice of Riesling-Silvaner as the raw material base is no coincidence. This grape variety brings a fresh, fruity acidity structure that perfectly matches the character of a light condimento. In contrast to most imported white balsamic vinegars, which are often based on wine vinegar with grape must concentrate, we work with pure, unconcentrated must from the region.
