The base is eggplant. The icing on the cake is the addition of plenty of black truffle. The result is an excellent tasting truffle paste. Spread on toasted bread or as a filling with ricotta and sheep's cheese for a chicken breast. Simply a fine quality from Umbria - and has been for over 20 years.
