Craftsmanship & Quality: Fennel Seed at the Core
Finocchio Taralli are traditionally made from wheat flour, extra virgin olive oil, white wine, and whole fennel seeds. The dough is hand-shaped into small rings, briefly blanched, and then baked in the oven until golden brown. The fennel seeds are left whole, not ground, which provides the characteristic bite and full aroma, with a light, typical ethereal note.
The fennel seeds come from Apulian agriculture and are traditionally harvested in late summer when their aroma profile is at its most intense. When baked, the seeds lightly toast, developing a warm, slightly sweet aroma reminiscent of anise, but significantly milder and more elegant.
