It may be true that the French have cultivated an unmistakeable flavour combination worldwide with «their» marriage of vegetables, known as ratatouille. This fusion of the taste and sourness of peperoni and tomatoes, the tenderness of aubergine and the crunch of courgette is like nothing else, and is simply a hit. This sugo is a tomato sauce – it is not ratatouille. However, and this is important: This sugo cooks for several hours, giving the flavours time to blend. Personally, this is my favourite sugo.
