Daniele often used to risk running out of light balsamic vinegar due to its huge popularity. Unable to get hold of any more grape juice, the only solution was to change the raw material. So grape juice was swapped for apple juice, and not only was peak demand covered but an innovative, regional, premium-quality product created in the process.

Condi Mela is best used on room-temperature vegetable salads. For example: Sear thin slices of fennel in a hot pan with a little olive oil. The fennel will take on a light golden colour but remain nice and crunchy. Plate up and season with salt and pepper, then drizzle with Condi Mela. Perfection! Serve with smoked trout and a hunk of tasty bread for a delicious healthy meal.
