The vinegar can also be reduced in a pan and the reduction used as a sauce for wild fish or lamb. Or how about duck breast, roasted until golden, seasoned with a little garlic, thyme and pepper: Mix a little balsamic reduction into the meat juices and cream together with a knob of cold butter, then drizzle liberally over the cut breast.
