Pasta made by Rustichella
The pasta made by Rustichella is produced by hand in Abruzzo. During this process, only the best choice durum wheat semolina (“primo grano”) with a raised gluten content is used, while the pasta dough is produced using pure mountain water – and may also contain eggs, depending on the variety.
This lends the pasta a unique consistency and an outstanding flavour: Leagues apart from industrially produced pasta! In addition, the dough is drawn slowly and carefully through bronze dies (“trafilatura al bronzo”), ensuring a slightly rough surface that will adhere to sauce of any kind. Finally, a slow drying process is carried out at low temperatures.
