Salame Cinghiale
Dishes and delicacies containing wild boar are widespread in Tuscany. Here, wild boar is used to make salami, lending the sausage an unmistakeable and powerful taste without a single off-flavour. Experienced butchers have been making this delicacy for many generations.
Salami al Torro
Here, the meat of the unmistakable high-shouldered bull is worked into a true delicacy. Chianina beef is not restricted to use in steaks alla fiorentina; no, it is used in a dried sausage delicacy of the highest quality.
Salami piccante
Gently warming: An apt description for this spicy salami. A light note of peperoncino surrounds the palate and throat when enjoying this salami delicacy. Can be served with robust red wines and cheese. Always slice thinly.
Salami Tartufo
A dried sausage with delicate, fine-textured salami and truffles. This delicacy is also typical for the region and is considered one of the best of all salami. Enjoy the gentle aroma that gradually forms from a slice of this salami.
Salami Grevigiano
Also known as “Haussalami” (literally: “House salami”). A salami of medium coarseness, well matured with an intense and sustained aroma and flavour. A delicacy that only reaches the shelves after around four months of maturing.
Salami Nobile
Nobile refers to the fine structure and texture, but not a gentle flavour. On the contrary: Experience a whole flood of flavour when enjoying this salami delicacy. If the author were ever to take the opportunity to produce salami themselves: This would be their goal and the benchmark to aim for.
Salami Montanaro
A coarser structure and a somewhat more powerful flavour than the Grevigiano. The meat used here is also slightly different. It comes from free-range animals and has been matured more intensively. A wonderful centrepiece on a plate of appetisers or a key component for supper.
