Nidi – a nest. Wrapped-up eggless pasta. Produced using “artigianale” methods, this pasta can be served as a side to cream-based dishes, or, as is common in the South of Italy, with deep-sea fish such as octopus or squid. This pasta is of the highest quality: It takes almost three days to dry.
