A huge amount of care and attention goes into this little bottle from the Daniele vinegar cellar, for it contains a speciality of the house. This balsamic vinegar is aged for over 12 years and becomes continuously more concentrated. Letting it mature for over a generation not only makes it sweeter, but also means its flavour is affected by all the conditions it is subjected to over the years: The cold nights of winter, the scorching days of summer (who could forget the heatwave of 2003?)…
